Spirits of the Wild West: Boot Hill Distillery

When I first met Roger Kelman and his son Hayes, they were bidding on a tote full of whiskey at the American Distilling Institute convention in Seattle, with the intent of filling bottles for the distillery in Dodge City, Kansas they had more or less inherited. Even then it was clear that, although they were already selling spirits under the Dodge City label, Hayes had a grander vision in mind, and I want to be among the first to congratulate him on having realized it.


This weekend, on the very site of the original Boot Hill Cemetery, Roger and Hayes, along with partner Chris Holovach, will open the doors of a distillery that has previously existed only in Hayes’ imagination and his co-owners’ faith in his ability to make it happen. Located in Dodge City’s old municipal hall, which was built in 1929 and recently restored, and situated atop the infamous Boot Hill of Wild West lore, the distillery will celebrate its grand opening with samples, tours, live music, and local food.


“Dodge City’s entire history is built on spirits,” Hayes says. “From the initial soldiers, to the buffalo hunters, to the cowboys of the cattle trails. And with our distillery perched on top of the original Boot Hill, we’ve now become the history of Dodge City.”

The Kelmans’ approach to spirits at Boot Hill Distillery is as far removed from their original business model as could be imagined. Having abandoned the practice of bottling and marketing spirits sourced from a contract distiller, their new product line is “obsessively-local”, with Hayes and his team maintaining complete control from seed to sip. Being farmers first and foremost, the ownership group produces every single grain that the distillery uses to craft their spirits, grain which is milled, mashed, fermented, distilled, filtered, proofed and bottled right onsite at the distillery. It’s everything that a true micro-distilling operation ought to be.


In the spring of 1872 George M. Hoover loaded his wagon with whiskey barrels, tied a bandana to his wagon wheel and counted out exactly five miles west from the edge of Fort Dodge, Kansas, where the sale of liquor would be legal. In creating western Kansas’ first and only craft distillery, Hayes and Roger Kelman have come at least that far.

Distillery Launch: Broad Branch Distillery - Winston-Salem, NC

Joe Tappe at Broad Branch reached out to us recently about the opening of their distillery in downtown Winston-Salem, NC. The distillery is focused on whiskey, which we all know takes time, and are doing things right, which we know takes dedication and effort. As Joe put it, "each journey begins and ends at our distillery in an old tobacco warehouse on historic Trade St. right here in Forsyth County, NC - from mill to mash to barrel to bottle. The result of so much love and labor? Small batch, premium cut, meticulously crafted, superlative spirits for discerning drinkers who give a damn. Like you."

Their first expression is a historic revival of a Frank Williams recipe, a white whiskey with "rye spice, hops driven hints of floral and grapefruit citrus notes."

With their location in the thriving neighborhood along Trade Street and North Carolina's penchant for exceptional whiskey, we expect good things for Broad Branch. We're excited to see what they come out with next!

Small Batch Irish Malt from Rademon Estate Distillery

Northern Ireland’s first and only craft distillery, Rademon Estate, recently revealed their plans to develop a new Irish Malt Whiskey.

Founded in 2012 by husband and wife team Fiona and David Boyd-Armstrong, and located on the couple’s historic family estate just outside Downpatrick, County Down, the distillery's award-winning Shortcross Gin has made a big impact in the burgeoning craft spirits market since its launch. This summer, attention has turned to the launch of their aged offering. The first casks of their new small batch Irish whiskey have been sealed and production is now underway, with 100 barrels expected to be laid up within the first year.

“The research and development behind the creation of our Irish Whiskey has been extensive," said managing director Fiona Boyd-Armstrong. "We are proud to announce this project and that this will be amongst the first Irish Whiskeys to be distilled in Northern Ireland.”

All aspects of production for Rademon's new Irish malt whiskey, from grain to glass, will be performed on site, using water from the estate’s own well. The whiskey will be matured in a variety of casks, which the distillers hope will allow for new and innovative flavours and aromas.

“I am thrilled we have developed what I know will be a fantastic Irish Malt Whiskey and I’m greatly looking forward to August 2018 when we will be able to sample our first three year old Irish Malt Whiskey," said David Boyd-Armstrong, head distiller at Rademon Estate. "This style of whiskey is a personal favourite of mine due to the complex flavour profile and I feel it is under represented in the market.”

Q&A with David & Fiona Boyd-Armstrong of Rademon Estate Distillery

 Have you created any jobs and do you expect to create more?

o We are expanding our team from four to eight, with four new posts to be filled imminently and a further two in the pipeline, which will bring our team to 10. 

 Have you seen sales increase month on month since you started?

o Yes, sales have risen month on month, and we are seeing increased interest and demand for Shortcross Gin in all of our markets.

 Where is Shortcross Gin currently available?

o Shortcross Gin is available in all good independent off licenses as well as high end hotels, bars and clubs across the province of Ireland. Having expanded our UK network to include Scotland and England, we have recently secured export orders to Holland, Spain and France. 

 And which new countries/markets do you plan to export to with this expansion? 

o We expect further expansion in European, North America, Asia, Australia - worldwide markets. 

 Where are most of your sales coming from? 

o Ireland at present but we expect our sales into European markets to expand this year.

 There aren’t many Irish gins, but there are lots of Irish whiskeys. Why go into whiskey? 

o As the business develops we are seeking to develop our skills and create new products. Entering the Whiskey market allows us to become part of the fastest growing spirits category globally and provides an exciting opportunity for us to expand the sales of our products.

o The current Irish Whiskey offering is dominated by Pot Still and Grain whiskies.  To differentiate ourselves we are creating an Irish Malt Whiskey, a style of Irish Whiskey that is under represented in the market.  

 Are there lots of Irish whiskeys? 

o There are less than ten working distilleries in Ireland, many of which produce a brand for third parties who are a brand and not a distillery, this is in comparison to Scotland who have 120 whiskey distilleries. Irish whiskey as a sector grew exponentially last year; it was the fastest growing spirit in the world.

 How long before you’re able to actually sell your whiskey? 

o A minimum of three years and a day.  However, we will only release our Whiskey at a point where we feel it is ready to enter the market place.  This means it could be 3, 5 of 7 years before our first release.  This is an aspect that makes creating our own whiskey very exciting.

 What is going to make your whiskey different to the other Irish whiskey distilleries that have started up? 

o We will be the third distillery to be operational in Northern Ireland in over 125 years. Our distillery will produce small batch hand-crafted whiskey and will be estate; it is our intention to use grain from our own estate. 

o We are creating an Irish Malt Whiskey, a style of Irish Whiskey that is under represented on the market.  

o We are also exploring the possibilities of using cask varieties that will aid us in creating new flavour profiles.

 It’s a crowded category, do you think you’ll be able to compete with big brands?

o We feel the market is not crowded, but is actually under supplied at the moment, thus creating an ideal scenario for new market entrants.  We aim to build upon our reputation for creating the award-winning Shortcross Gin to develop a new and exciting Irish Malt Whiskey.

Spanish Spirit of Wonder

If you're going to be a MicroShiner, its important to be worldly, and to always maintain the questioning wonder of youth. Which is why we we're so stoked to share this new collaboration from Cervezas La Virgen and SANTAMANIA Urban Distillery in Madrid, España.

While not the first beer spirit we have encountered (check out the Summer 14 issue for our Whistling Andy Hopschnop pairing), we can't help but be enamored with the origin story of CERVODKA, a project born from the entrepreneurial spirit of Cesar, Ana and Jaime (partners at La Virgen) and Javier, Ramon and Victor (their distilling neighbors from SANTAMANIA) and their mantra of wonder -"What would happen if we distilled beer; could we get beer’s vodka?"

The result: an innovative vodka made from beer launched in a limited edition of 740 bottles.

Billed as "a distillate with its own personality, with a graduation of 40º and creamy sense in the mouth, a very subtle touch of cereal and white chocolate which highlights the notes of hop and the citrus hints", this unique spirit is a testament to the questing and inspired nature found in today's craft producer.

Both companies are committed to minimizing their environmental impact and have reflected this value in the process of creating CERVODKA, (as they like to call it). And like their peers on this side of the Pond, they maintain a passion for the craft of production, paying attention to every detail, including an exclusive bottle that illustrates the history of this fruitful encounter between the companies, using recognizable icons of both brands: Vera – the copper still, soul of the SANTAMANIA urban distillery – and the Tap Room, true heart of the La Virgen brewery.

Grand Opening at Ironroot Republic

We were fortunate enough to meet the Ironroot team at the ADI Distillers Convention in Seattle this past spring, and we have been anxiously awaiting the launch of their Dension, Texas-based distillery ever since.

Three years in the making, Ironroot Republic Distillery began when brothers Jonathan and Robert Likarish paid a visit to a craft distillery in Spokane, Washington while vacationing with their family. Excited by what they saw, they coupled their interest for making innovative spirits and liqueurs with their desire to create a product using fresh, local ingredients to establish Denison's first distillery, Ironroot Republic.

“It is important to us that all of our products are made from scratch,” says owner Jonathan Likarish. “We work very closely with a grain mill in Muenster, Texas to ensure we are using the only the best raw ingredients. We also look forward to collaborating with local brewers and distillers to develop unique concepts.”

Ironroot Republic is currently offering Moonshine and Vodka, but has barreled whiskey waiting to be tapped next year. Later this winter they intend to launch a Coffee Liqueur as well as a Gin.

“It's been a long time coming, but we can't wait for our doors to be open for everyone to experience Ironroot Republic,” says Robert Likarish.

Alaska craft spirits launch micro-distillery small batch tasting room

Christmas in October

As it turns out, Friday, October 31st, is actually Halloween, but it may feel like Christmas to craft spirit lovers in the small port town of Haines, Alaska.

That's because Port Chilkoot Distillery will be celebrating the Grand Opening of their new tasting room with special Halloween cocktails ($6 each), free snacks, and non-alcoholic drinks.

Following the launch, regular winter hours at the tasting room will be Thursday through Sat, 1-7 pm. 
The drink menu will change weekly to highlight seasonal themes and incorporate fresh, quality ingredients into special cocktails and infusions from their Port Chilkoot Distillery Vodka, Gin, and Moonshine Whiskey. 

Those who haven't tried Port Chilkoot's micro-distilled spirits can also order a sample, straight, to experience the full flavor of their small batch product. Alaska law allows micro-distillers to serve on-site a maximum of two drinks per person per day and sell up to 5 bottles per day for off-site consumption. It also says they can't have seats at the bar.

Look for announcements about special events: tasting parties, cocktail recipe classes,and other special events at Port Chilkoot Distillery, and factor a visit to their tasting room into your next heli-ski or fishing trip to Southeastern Alaska.

American brandy makers Copper & Kings have launched a new product, called Absinthe Blanche. This small batch, double copper pot-distilled spirit pairs a Muscat brandy base with classic absinthe botanicals including grande wormwood, anis, fennel and hyssop. These standards are mixed with additional signature accents, and the resultant blend non-chill filtered with no post-distillation infusions if color or flavor.

“Absinthe is just so much more rock n’ roll than gin,” said Copper & Kings owner Joe Heron. “An unconstrained spirit should not be inhibited completely by tradition. Owens & Sons Malt Company on Indiegogo

Bill Owens of ADI fame has launched a campaign on Indiegogo to raise funds for his latest project, the first-ever brewery, distillery, and malt house to be opened in America under one roof.

Bill has launched numerous projects over the years, perhaps best known in these circles for founding the American Distilling Institute, which has been the requisite jumping off point for aspiring distillers for more than a decade. Now Bill, and son Erik, are taking on one of their biggest projects to date, Owens & Sons Malt Company.

Malted barley is the backbone for brewing and distilling. Owens & Sons will create floor-malted barley in small batches for craft breweries, craft distilleries, bakers, home brewers and select shops selling brewing supplies.

Triple Divide Spirits

If the aptly named Triple Divide Peak in Glacier National Park is the hydrological apex of North America, one of only a few places on earth where water flows into three oceans, then it stands to reason that Triple Divide Spirits in Helena, Montana may well aspire to stand atop the mixological one. Whether or not they achieve this lofty summit is for each of us to determine on our own, but what can be certain is that their Front Street tasting room pours a crisp, clean, distinctly flavored vodka and a number of tasty cocktails.


Located in downtown Helena's famous Last Chance Gulch, the space is long and dimly lit, a cross between speakeasy and martini bar. There is a martini on the menu, along with several other unique drinks. Operations manager Jen walked me through it, noting the Montana Jackass, a twist on the popular Moscow Mule theme and their biggest seller. After sampling the vodka itself, which finished light with a hint of fruit, I tried the signature 790, an extremely sweet mix of pomegranate juice, simple syrup, and freshly squeezed lemon. In barman Will's words, "it overwhelms the vodka, but it tastes good."





Having only recently opened their doors this past November, Jen says that while they are being carried in a number of area retailers and taverns their current focus is on their tasting room clientele. This was obvious in the inviting and personal manner of the two young mixologists behind the bar, who greeted and thanked every customer that passed, many by name, while crafting cocktails with an ample amount of concern for the resultant product.




"Life is too short for bad drinks," Will says to his partner. "If you hear someone complain about a drink, take it from them, and I'll make another."

Life is also too short for empty drinks, so I asked for the 5th of December. Based on classic Prohibition-era flavors, this ideal summer cocktail is made of vodka, elderflower syrup, fresh lime, and soda water over ice. It was tart, with a subtle but not non-existent flavor.
  

Owned and operated by Helena attorney (and Hel'z Bellez roller derby girl) Karen Powell and her distiller husband JP Crowley, Triple Divide Spirits currently produces a vodka, with a gin slated to launch in the spring. They are located at 790 Front Street in Helena, Montana and their tasting room is open Wednesday through Saturday from 4-8pm.

Launched: Mountain View Vineyard & Distillery

Now that everyone has had some time to come to terms with the knowledge that, yes, Thanksgiving is over and we do actually have jobs to go back to, we can find solace in the fact that there are plenty of good folks out there hard at work ensuring we have a handcrafted drink at the end of it all.

One such member of that noble fraternity is newcomer to the craft community Mountain View Vineyard & Distillery. Not to be confused with Swanson's Mountain View Orchard and Distillery, who we featured in our inaugural issue of MicroShiner magazine, this particular Mountain View is a small vineyard/winery/distillery located in the Pocono Mountains of Pennsylvania. Already established after a decade of hard work and determination as a "seriously fun" vineyard and winery, the Mountain View micro-distillery opened on September 1st, 2013 to a great reception, featuring shine, brandy and port.
